Willie's motto is "nature has done all the hard work... a chef's job is to present natures flavours to best effect, with a little intervention as possible"... "The skill is to do just enough"
We make all sauces and marinades on site, use a forager for fresh seasonal greens, herbs and fungi, and artisan suppliers for cheese, meats, fish, and vegetables. By focusing on the best of Scottish you will of course find seasonal game and beef on the menu. However, we provide vegetarian alternatives, and try to cater for those with gluten intolerance. If you have other special dietary needs we will try to take these into account if you tell us when you make a reservation.
The wine list has been specially prepared by our wine merchant to compliment the menu with a range of white, red and sparkling wines. Our table staff will be happy to make recommendations on specific wines for specific items.
The Brasserie is open from 12.00 – 22.00, offering a range of menu options, including light lunches, an evening fine dining menu and five course tasting menu. Just five minutes from Edinburgh Playhouse Theatre we are an ideal location for a pre-theatre meal or place to meet for a relaxed lunch or dinner after a hard day's work, shopping or tourism
The Brasserie is located on the ground floor and seats around 26. Sadly, the Brasserie is not suitable for people with limited mobility. The historic "A" listing of the building prevents disability ramps and the hotel does not have a lift. There are stairs at the entrance and stairs to toilet facilities. Staff will do everything they can to assist, but please take into account your mobility when considering booking with us
